Feb. 21 (Tues) 11am to 7pm! - It’s Fat Tuesday, and that means a variety of Cajun specials will be served up for this annual event. Dantoufee, Dumbo, Danbalaya whatever you want to call it— there will be plenty of seafood and andouille swimming in a Cajun concoction served with rice and a big ol’ crawfish, big fresh oysters done NOLA style, or maybe some Shrimp Boulettes as an appetizer. No reservations necessary, just hearty appetites and an attitude of “laissez les bons temps rouler!”

What’s new this week??? What surprises are in store from the kitchen this week? Simple, we’ll be having a new weekday menu, and we’ll share it with you starting this weekend. Let’s be serious, it’s time for a change in our tasty snacks. While not a vast change, there are at least a couple new items for you to enjoy. Saturday is National Wine Drinking Day, so why not put out a few new items? So this Saturday, any and all that is new will be on our bar menu. Stop in and celebrate this contrived celebration, and we’ll enjoy serving you something new.

It’s great to begin seeing the 2022 rosés... that’s always my first indication of Spring! I mean seriously, it’s a much better indicator than a groundhog… We’re tasting quite a few today as pre-orders, and we’ll pick quite a few of those. We also received a catalog from another distributor with over 40 rosés to choose from. Either way, they’re on their way and will be here within the next couple of months… just like Spring.

Apparently Charles and Steven Coniglio are calling it quits after 22 years in the wine business. That’s always sad to hear, but if it brings me a bargain along the way, well hey -- sorry guys, I’m in! Their 2015 Cabernet was selling via the winery at $70 a bottle, but your price now from the Wine Merchant is $49.99. We have carried this wine before, and not only was it a big enjoyable Cabernet from Napa, but to be honest, it had an adorable bunny on the label… OK, I like rabbits. Coniglio in Italian means rabbits because that’s where I like them the most: deep fried on my plate… oops, I digress. This Cabernet Sauvignon is from a respected and historic district off the Silverado Trail. The wine has the structure one expects from mountain vineyards, yet it is approachable and enjoyable now. The aromas are packed with dark berries, spice and cassis. The palate is rich yet balanced with smooth tannins and a lingering finish. Not all my words, but I do remember enjoying this Cabernet and sharing it with others. I’m not sure how many the distributor picked up, but I have a few coming in today at a price that is very hard to say no to…

This is the second 2022 rosé we’ve seen, so get ready because they’re beginning to come in. The “Pinot Noir grapes for our rosé come from the village of Vias, in the South of France, where twenty-plus-year-old vines are planted to rocky, volcanic soils. Upon harvest, the grapes are gently pressed, and the juice remains on the skins just long enough to give the wine a pale pink hue. The rosé is vinified in stainless steel to preserve its mineral core and juicy freshness.” Its taste is cleverly credited as “juicy white peach and fresh-picked raspberry. Finishes with a bright, zippy burst of acidity.” Yep, that’s what I want: bright and zippy. Bring it on -- and at $12.99, I’ll take two!
Food Feature 🐄
While the weather outside is always unpredictable, I’m thinking that you can dust that grill off and sneak a couple steaks in before the next cold snap. C’mon, let's cheat February out of a couple good sunny days and fire that grill up! While some beef prices remain high, others like our hand cut Prime Strips are only $18.99/lb. This price doesn’t seem real. These steaks are tremendous; their marbling is absolutely superb, making these my go-to for the grill. Demkota beef is always welcome here; they are a smaller processor who only buy from local ranches and are highly selective in that which they market. Good partners and great, great beef at a reasonable price -- that’s all I’m looking for to share with you.
Oyster News 🦪
This week we went back to our old favorites: Acadian Pearl from Prince Edward Island. The King family has been in the seafood business for six decades. The family started out in the lobster business, operated a substantial lobster processing facility, and grew a few oysters on the side. In the mid-nineties, the family ceased lobster operations and began growing oysters as their primary business. The company is currently run by Danny King (son of the founder) and is Canada’s largest oyster operation by acres farmed. These oysters can best be described as nicely plump, crunchy but relatively lean, giving a slightly iodized and sweet flavor reminiscent of the best Mediterranean clams. The Acadian Pearl Oyster pleases everyone, from the connoisseur gourmet to the novice. A real gem, this treasure is buried for up to five years deep in Richibucto Bay, matured and purified in suspension for the last three weeks, before being carefully harvested and dispatched to the world’s finest tables.

It’s been a busy week, Valentine's Day and now preparations for Fat Tuesday have kept me busy in the kitchen. Shrimp, crawfish, crab, scallops, andouille sausage and chicken will make this coming Tuesday’s dish quite the attraction.
